I am currently sectioning brain tissue with the cryostat and I wanted to know if there are adverse effects in leaving the brain tissue in the 30% sucrose sink too long after it has initially sunk?

None that I've seen.  I've had fixed, sucrose cryoprotected brains floating around in the fridge for months and months and they still show good signal in downstream IHC.
